Notes : This was created as a variation of a classic silver sour, made to highlight the notes of Tanquerey No. 10.
Ingredients : housemade caramelized pineapple sorbet, Ron Zacapa No. 23, coconut water, cold brew concentrate, PX sherry, mint syrup, angostura bitters, and almond cocoa foam. Spritzed with “mountain mist” containing notes of baking spice, almond, apricot and orange.

Notes : This is a layered, stirred cocktail that is meant to change as you sip it. The first sip is meant to be mostly the stirred portion with a taste of the foam. But as the caramelized pineapple sorbet on the bottom starts to melt, it will transform into a different cocktail, adding complexity. The tasting notes of the cocktail are meant to represent the notes imparted into the rum by the various barrels used in the solera aging process.

Notes : When Brenda was the head bartender at Thief, she designed not only the original bar’s cocktail menu, but the new menu for their second location’s launch in the Lower East Side. This is one example of a drink from their brunch menu. It is a slight twist on a classic cocktail that has a reputation of being a disco and 80s era drink, though the original was created in the 60s.
